# What You'll Need:

→ Vegetables

01 - 2 red bell peppers, cored and sliced into strips
02 - 2 yellow bell peppers, cored and sliced into strips
03 - 1 red onion, peeled and sliced into half-moons
04 - 1 medium zucchini, sliced lengthwise into strips
05 - 1 cup cherry tomatoes, halved

→ Spices and Seasonings

06 - 2 tablespoons olive oil
07 - 2 tablespoons Tajin seasoning
08 - 1 teaspoon smoked paprika
09 - 1/2 teaspoon ground cumin
10 - 1/4 teaspoon black pepper
11 - 1/2 teaspoon kosher salt

→ Cheese

12 - 5.3 ounces feta cheese, crumbled

→ For Serving

13 - 8 small flour or corn tortillas
14 - Fresh cilantro, chopped
15 - Lime wedges

# Method:

01 - Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper and set aside.
02 - In a large mixing bowl, combine the sliced bell peppers, red onion, zucchini strips, and halved cherry tomatoes. Drizzle with olive oil, then sprinkle Tajin seasoning, smoked paprika, ground cumin, black pepper, and kosher salt over the top. Toss thoroughly until every piece is evenly coated.
03 - Spread the seasoned vegetables in a single even layer across the prepared baking sheet, avoiding overcrowding. Roast for 20 to 22 minutes, stirring halfway through, until the vegetables are tender and lightly charred at the edges.
04 - Remove the baking sheet from the oven and scatter the crumbled feta cheese evenly over the hot vegetables. Return to the oven for 3 additional minutes, just until the feta softens and becomes creamy.
05 - While the feta finishes, warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or stack them and microwave for 20 to 30 seconds until pliable.
06 - Spoon the roasted vegetable and feta mixture into the warmed tortillas. Top generously with fresh chopped cilantro and a generous squeeze of lime juice. Serve immediately.

# Insider Tips:

01 -
  • The Tajin does all the heavy lifting for flavor, so you barely need a spice cabinet to make this sing.
  • Roasting everything on one pan means the vegetables caramelize beautifully while you practically do nothing.
  • Crumbling feta over piping hot fajita veggies creates this creamy, tangy moment that regular cheese simply cannot match.
02 -
  • Crowding the pan is the fastest way to steamed instead of roasted vegetables, use two pans if necessary rather than piling everything on top of itself.
  • The feta only needs three minutes, any longer and it turns rubbery and strange instead of soft and pillowy.
  • Tajin already contains salt, so always taste the finished vegetables before adding any extra seasoning at the end.
03 -
  • Let the vegetables sit undisturbed for the first ten minutes of roasting so they actually develop a proper char instead of just getting soft.
  • Buy a block of feta and crumble it yourself, the pre crumbled kind is coated in anti caking powder that stops it from melting into those beautiful creamy pockets.
