# Method:

01 - Preheat oven to 350°F. Grease and flour an 8-inch round cake pan.
02 - Whisk together flour, baking powder, and salt in a bowl. Set aside.
03 - Beat softened butter and granulated sugar in a large bowl until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in chopped lavender and vanilla extract.

# Insider Tips:

01 -
  • The way your entire kitchen fills with the most calming floral scent while it bakes feels like therapy you can eat
  • That tender lavender lemon glaze turns an ordinary cake into something that looks like it came from a fancy French patisserie
02 -
  • Culinary lavender is essential because garden lavender can be treated with pesticides or have a bitter, soapy taste
  • Overbaking will dry out this delicate cake, so start checking at the 25 minute mark even if it looks underdone
03 -
  • Bring all your ingredients to room temperature before starting, this prevents the batter from curdling and ensures even baking
  • Use a light colored pan rather than dark metal to prevent the edges from overbrowning before the center is done
