Collagen Fruit Jellies (Printable)

Chewy, naturally sweet fruit jellies boosted with collagen for a healthy, guilt-free snack the whole family will love.

# What You'll Need:

→ Fruit Base

01 - 1 cup (240 ml) 100% fruit juice (orange, mixed berries, or apple)
02 - 2 to 3 tablespoons honey or maple syrup, optional, to taste

→ Collagen & Gelling

03 - 2 tablespoons (about 20 g) grass-fed collagen peptides
04 - 3 tablespoons (about 30 g) unflavored gelatin powder

# Method:

01 - Pour the fruit juice into a small saucepan. Sprinkle the gelatin evenly over the surface and let it sit for 2 to 3 minutes to bloom.
02 - Set the saucepan over low heat and stir constantly until the gelatin dissolves completely. Do not allow the mixture to boil.
03 - Remove from heat. Add the collagen peptides and honey or maple syrup if using, stirring thoroughly until fully combined.
04 - Transfer the mixture into silicone molds or a small baking dish lined with parchment paper.
05 - Refrigerate for at least 2 hours or until the jellies are completely firm and set.
06 - Remove the jellies from the molds. If using a baking dish, cut into bite-sized squares with a paring knife.
07 - Keep the jellies in an airtight container in the refrigerator for up to 1 week.

# Insider Tips:

01 -
  • These take almost zero effort but look like something from a fancy health food shop.
  • The collagen is completely tasteless, so you get all the skin and joint benefits without any weird texture.
02 -
  • If the gelatin does not bloom properly before heating, you will end up with clumpy bits that never dissolve, so patience in those first 3 minutes really matters.
  • Boiling the mixture destroys the gelling power of gelatin, so keep the heat low and gentle the entire time.
03 -
  • Spray your molds with the faintest mist of neutral oil before pouring and every single jelly will release perfectly without tearing.
  • Let the mixture cool for about five minutes before pouring into molds and the bubbles will rise and pop on their own, giving you crystal clear jellies.
